Chia Seed Pudding – Detoxifying and Delicious!

I ate all 4 servings in 10 minutes. Oops. Sorry kids. Sorry husband. All mine!

So this pudding is packed with nutrition! It is detoxifying and immune boosting. Chia seeds are rich in polyunsaturated fats, especially omega-3 fatty acids, and fiber! Fiber is good for reducing inflammation, lowering cholesterol and regulating bowel function. (yay) Chia seeds are also rich in antioxidants which help protect your body from free radicals, aging and cancer. (double yay)

 Chia Seed Pudding

  • 2 1/2 cups milk (almond, coconut, cows, breast or flax)
  • 3 tablespoons raw honey (immune boosting)
  • 1/2 cup chia seeds (3 ounces)
  • 1/2 teaspoon finely grated lemon or orance zest
    In a 1-quart jar, combine your choice of milk with the raw honey. Close the jar and shake to combine. Add the chia seeds and lemon zest to the jar, then close and shake well. Refrigerate until very thick and pudding-like. Shake occasionally. Takes 4 hours.
    Serve with fresh fruit.
