Eat It: Summer Fiesta Lime Chicken Dinner

This dinner was one of the most flavorful and fragrant dishes I have ever made! My husband came home and said it smelled like a 5 star restaurant! It was super easy to make, and is so healthy! I know your family will enjoy it as much as mine did! I also want to mention that you can also sub salmon, or cod for the chicken!  Let’s begin…

Fiesta Lime Chicken

 Ingredients/Directions

Sprinkle chili powder and sea salt onto chicken, place sliced lime on top, and bake at 375 until golden brown.

Roasted Garlic

Ingredients/Directions

Slice garlic head with a serrated knife. Drizzle olive oil.  Sprinkle with sea salt/pepper. Bake at 375 until golden brown.

Roasted Tomato topped with Feta Cheese

Ingredients/Directions

Slice tomato in half. Drizzle with olive oil. Sprinkle with sea salt/pepper. Top with feta. Bake at 375.

Savory Quinoa and Kale

Ingredients/Directions

Add equal parts of quinoa and water to pot or rice cooker(1 cup of each). Add 2 tsp of sea salt. 2 TBLS of olive oil. 2 handfuls of kale. Cook until tender!

Steamed Broccoli

Ingredients/Directions

  • Broccoli
  • Sea salt
  • Pepper

Place Broccoli in steamer. Salt to taste. Steam until tender.
