- 1 large Eggplant
- Olive Oil (click here to check out my favorite kind of organic olive oil)
- 1 tablespoon Garlic Salt
- 1/2 tablespoon ground pepper
- 1 cup Pasta Sauce
- Cheese: Mozzarella (I didn’t have any so I used baby Swiss)& Parmesan
- Optional: Basil, oregano, olives, onions, artichokes
Rinse and slice eggplant into 1/2 inch thick rounds
Brush both sided with olive oil and sprinkle with black pepper and garlic powder.
Pop in over at 400 degrees for 10 minutes (or until very tender)
Remove from oven and top eggplant rounds with pasta sauce & cheeses
Continue baking until cheese melts & enjoy!
