This recipe is simple, easy and much healthier than store bought options!
I consider myself somewhat of a MacGyver in the kitchen (not to be confused with a Martha; who actually knows what she is doing).
My husband calls me a “rogue cook” because I am incapable of sticking to recipes! I’ve learned the hard way that recipes exist for a reason and baking especially is a science and not a “feeling” …. hence the reason 50-70% of my baking ventures are utter fails.
But every once in a great while I have a win! My homemade frosting is a win!
I wanted to bake a cake for a Girls’ Night In, but due to my lack of planning I left it to the last minute. I’ll be honest, I used a Betty Crocker cake mix but made a few healthy trades; coconut oil for vegetable oil and used farm fresh eggs. Once I had already started baking the cake in my cast iron skillet, I realized we had no frosting! So I had a look at my options and decided to pull a Hail Mary, throw some stuff together, and give it a go! The result was seriously delicious.
Ingredients and directions:
- 3 cups softened chocolate chips
- 1 cup organic softened butter
- 3 tablespoons organic maple syrup
- 3 tablespoons powdered cocoa (I actually didn’t have any and used powdered chai latte mix!)
- Mix in processor and you’re good to go!
This is probably the most random recipe ever, but I assure you it was a great hit!
