Healthy Recipe: Kids Veggie Nuggets

I’m always looking for fun ways to get my kiddies to eat more veggies, and this is a great and easy way to do it!  -Krystle K

Ingredient/Supplies

Directions:

1. Grate all of the veggies

2. Cook in pot until tender on medium.

3. Remove from heat and add breadcrumbs (also perfect time to add any optional spices like sea salt, onion or garlic powder)

4. Cool in fridge for 30 minutes

5. Form into nuggets (smash your peas more than I did, whole peas create cracks in the nuggets)

6. Coat pan in olive oil and cook till golden (you can also bake the nuggets at 450°F for 10 minutes)

Or you can make patties!

    E can’t do bread crumbs… think these would stay together without them? What about using juicing pulp for these? maybe stay together better? Hmmm, i’m gonna try it.
